Well, if you pick the right site and pick at the right time, at least you get an honest wine. After that, I follow follow the rule Josh Jensen laid down, "If in doubt, don't do it" . He was probably following an old Burgundian advice about manipulation during fermentation.

Yes, let Pinot be Pinot, which will result in it reflecting the location it was grown in. That in my mind is one of the great characteristics of Pinot, it is a highly transparent grape.
Glad to read a review of a small production that is doing it right.
