After that, I follow  follow the rule Josh Jensen laid down, &quot;If in doubt, don&#039;t do it&quot; . He was probably following an old Burgundian advice about manipulation during fermentation.

		<description>Yes, let Pinot be Pinot, which will result in it reflecting the location it was grown in. That in my mind is  one of the great characteristics of Pinot, it  is a highly transparent grape.
